Chicken Fry Andhra Style


Ingredients:
Oil - 6 Tbspn
Curry Leaves - 1/2 cup
Green Chilies - 4 Slitted
Black Pepper Powder - 1/2 Tsp
Cashew Nut Powder - 2 Tbspn


Ingredients for Marination:                                                  Ingredients for Garam Masala:
Boneless Chicken - 1/2 kg in small cubes                            2 Tbspn Coriander Seeds
Lemon Juice - 1 No.                                                             1" Cinnsmon
Turmeric Powder - 1/2 Tsp                                                   8 Cloves
Chilli Powder - 2 Tbspn                                                       5 Green Cardamoms
2 Large Onion (Ground)                                                       1 Tspn Cumin seeds
Ginger Paste - 1 Tbspn                                                         1/2 Tspn Fennel seeds
Garlic Paste - 1 Tbspn
Ghee - 1 Tbspn
Finely Chopped Coriander Leaves - 1/4 Cup
Salt as per taste

Method:

1) Make a fine powder of the garam masala ingredients.
2) Marinate the chicken with the ingredients mentioned and the garam masala powder and set aside for 15 - 30 minutes.
3) Then cook the chicken on a low flame until the chicken is soft and tender.
4) Heat oil in a pan and add the curry leaves and the green chillies and fry till leaves turn crispy.
5) Add the cooked chicken and fry on a high flame.
6) Add the black pepper powder and cashew nut powder and fry further for 3-4 minutes and garnish with coriander leaves and serve with hot butter naan ...
